Chicken with Ginger

Thai Cooking Class with Easy Day Thailand


CHICKEN WITH GINGER Thai style (Gai Phad Khing)

One of my all time favourite Thai dish is stir fried chicken with ginger, add a glass of Thai ice tea then your meal will be just perfect!

Ingredients (serves 2):

  • Chicken with Ginger, Thai Cooking Class with Easy Day Thailand
    Chicken with Ginger
    30 mls (2 tbsp) vegetable oil
  • 200g (2 cups) chicken breast, thinly sliced
  • 1 clove of garlic, minced.
  • 100g (1 cup) fresh mushrooms, sliced
  • 40 g (1/3 cup) long Thai chili, cut diagonally
  • 40 g (1/3 cup) ginger, finely sliced
  • 15 mls (1 tbsp) fish sauce
  • 15 mls (1 tbsp) light soy sauce
  • 15 mls (1 tbsp) oyster sauce
  • 5g (1 tsp) palm sugar (or normal sugar)
  • 30 g (¼ cup) chopped onion
  • 2 spring onions, cut into1 in. lengths
  • coriander leaves, coarsely chopped (garnish)

Preparation:
  1. Heat the oil in a wok, add garlic and stir fry until golden.
  1. Add chicken and stir fry until nearly cooked, then add fish sauce, soy sauce and oyster sauce and stir until begins to bubble
  1. Add the rest of the ingredients and stir fry until the chicken is done.
  1. Serve garnished with coriander laves and with hot steamed rice.
Ginger lover can try my mom's style by put at least twice as much ginger (or more) and less of other vegetable, it will be hot but you will love it! and can try with beef which is also nice.

Chicken with Cashew Nuts

CHICKEN WITH CASHEW NUTS (Gai Phad Med Ma Muang)

One of the Thai dish that never fail me when I introduce them to my foreigner friends is Chicken with cashew nuts, it's a simple dish and very easy to make.

Ingredients (serves 2):


  • Chicken with Cashew Nuts - Thai Cooking Classes with Easy Day Thailand
    Chicken with cashew nuts
    30 mls (2 tbsp) light soy sauce
  • 150g (¾ cup) chicken breast, thinly sliced
  • 30 mls (2 tbsp) vegetable oil
  • 2 cloves of garlic, finely chopped.
  • 60g (½ cup) cashew nuts, deep-fried or roasted
  • 15 mls (1 tbsp) oyster sauce
  • 15 mls (1 tbsp) light soy sauce
  • 5 mls (1 tsp) chili paste
  • 5g (1 tsp) palm sugar (or normal sugar)
  • 40 g (1/3 cup) spring onions, cut into1 in. lengths
  • 10 small dried red chilies, deep fried or roasted (garnish)
  • coriander leaves, coarsely chopped (garnish)

Preparation:
  • Heat the oil in a wok and fry the chicken, turning occasionally for about 3-5 minutes or until tender. Place them to drain on paper towel.
  • Heat the oil in wok and fry garlic until begins to color. Add onions and cashew nuts then fry until all vegetables are done for about 1-2 minutes. Add chicken and season with oyster sauce, soy sauce, chili paste and sugar until well combined. Sprinkle spring onions and cook for about 30 seconds.
  • Serve sprinkled with coriander leaves and deep-fried dried chillies.

    You can try to make with beef instead of chicken which I really like though it better to cook it yourself, for some reason many times beef that they use in Thai restaurant here are very chewy.

Phuket weather June 2014 from 11th to 20th

As was predicted from all forecast strong wind and rain hit Phuket and the Andaman cost last week end. Waves were up to three meters.

The combination of strong winds and high tide during full moon, made the waves very high and strong. With some bad consequence for the shore line. We stared second part of June with great weather.

Now situation is much better and waves are down to normal level for the season. In about ten days we should go in the normal calm and nice weather that July offers.

Strong wind then kept blowing during the whole week, specially during the night. still can enjoy a lot of sun during the day. Now it is important to keep attention while swimming from shore. It is time again for rip currents. This situation will stay until October when wind direction will change.

Swimming from Phuket west coast beaches are dangerous during summer, so follow the signs, don't go in the water when red flags are showed and follwo the indication from the beach guards and locals.

Not many people know that the Gulf of Thailand and Koh Samui have opposite weather pattern so now there is time for flat sea, and sunshine. Thailand it is really a year round tourist place, just need to now where and when.

Sorry this note came late – was busy taking care of my son’s injury the moment we touch back home.

Just wanna say THANKS for the GREAT arrangements – my family and I simply LOVE the program especially on the trip to James Bond island.
THANKS for having Ms Bee with us – she’s very knowledgeable and cares a lot for us. THANKS also to our driver Ms Amy (hope I got it right)
who drove us around – and both of them brought us to what we “wanted” J - Durians and Mangosteens JJ. Easy Day Thailand is GREAT service.

I would love to leave my appreciation and recommendation note – however I am not sure which portal. So if you have a site for me to share
my experience on the recent Phuket trip, do let me know. OVERALL – I am very glad to know you, your patience and detailed works are perfecto.

My family and I already plan to return to Phuket next MARCH – I guess AUG-DEC is raining season right ? and for sure I will get in touch w you.
My son and I will want to go Flying Hanuman. And we will go Phi Phi Island, Water Rafting ++ and whatever nice programs you will have then.

Phuket weather update 1st to 10th June 2014

First part of June has passed  with not much changes. Local thunderstorms with heavy rain and lots of sunshine.

Normally in June strong wind from south west creates perfect conditions for surfing in Phuket. For now surf lovers must wait and enjoy the Surf House in Kata.

So all good for now for any kind of activities,  snorkeling, diving, and specially now is time for rafting in Phang Nga. Streams water level is perfect to enjoy.

But check forecast as weather is due to change soon at the end of this week, bringing heavy rain and strong wind.

Reviews - Adam and Tara

Good evening Francesco,

I hope you are well.

We have just returned from our 2 day 1 night trip and would like to provide you with some feedback.

Overall I think the tour was satisfactory but there are a few aspects of the itinerary where I feel very short changed and that things could have been better.

Firstly our stop at the Tsunami museum was something we were looking forward to very much, but when we arrived there I could have easily mistaken it for a market stall, the only give away was the fact the owner was selling Tsunami magazines at 300 baht, over 3 times the price printed on the front! And what a museum comprises of in my head is more than a 1 metre wall with a few faded photos on it.

Our next stop at the 'Monkey Cave' was exactly that, a pit stop. The cave was off limits but in fairness we did see some monkeys.

The elephant trekking was really good but only lasted 45 minutes instead of the advertised 90 minutes.
Lunch was a highlight. Everyone enjoyed the food!

We then worked our way to the raft houses on the lake, they were brilliant set in even better surroundings. Dinner was fantastic however our night safari was a bit of a joke. Our guide told us 5 minutes in that they have never seen anything before and that we should do it on the morning if we wanted to see any wildlife, but then that wouldn't be a 'night' safari would it? We headed back shortly afterwards via a tree stump which nearly flipped the boat, I know this could have happened to anyone but at that point it only added to a disappointing experience.

The morning safari was combined with the boat ride across the lake to the rainforest trek starting point. Our guide through the jungle was very enthusiastic and fun, Bra did her best to show us as much wildlife as she could find. The trek bought us to the motor powered bamboo raft jetty. Which we used for our 10 minute crossing to the cave on the lake.
The cave tour was interesting and enjoyable.
We left the raft house at 12.30pm after another good lunch.

We got to our minibus changeover point at 2.10pm, to find we would have to wait for around an hour for a group of Russians who were at that point rafting, motor free, down a river. Could this spare hour not have been spent better, like at the raft house maybe..or joining in with the rafting?

Tara and I did both enjoy the trip as a whole but don't feel it justified the cost we paid.
My overall disappointment lies in the fact that we could have booked  the accommodation and the worthwhile activities ourselves at a fraction of the cost. We chose however to book with a credible company such as yourselves (knowing this would cost more) on the basis that your company would have spent good time on planning the perfect itinerary.

I wanted to email you personally about our feedback as I do like to leave TripAdvisor reviews and wouldn't like to be unfair by publishing negatives without approaching you first.

Phuket Weather in May 2014 from 15th to 31st

During second half of May weather was as expected with some heavy rain storm. Still many good sunny days. What is important that wind is weak resulting is almost flat sea.

The Marine parks are now closed as for every year to let nature rest from tourist and divers and for safety as waves in open sea can be high as three meters as soon wind will blow.

As said Marine National Park on Andaman Coast of Thailand are now closed. This is normal and every year on 15th May the official closure is announced. Why the Marine park in Thailand close? First of all weather conditions, in Similan Islands and south of Lanta at hin Deng and Hin Muang the sea conditions can rapidly change. Won't be so nice to be outside the sea with two or three meters waves and may have to stay sheltered fro few days.

Second to allow the beautiful nature there to take a rest from torus, diving and all traffic generated by tourist activities.

They will re open on 15th October or soon after when weather conditions will become more stable with the Winter Monsoon

Just wanted to drop you a note to say thank you to you and the team for our wonderful trip last Monday. Bee and our driver (sorry I have forgotten his name) looked after us really well.

The kids were entranced with the long boat - it's the longest I have ever seen my 2 year old sit still! The canoeing was a fantastic recommendation and the food at the floating village was lovely.

It was a perfect way to celebrate my husbands birthday, he was over the moon.
